Ingredients
- 3.5 oz. (100 g) cooked chicken, shredded or chopped
- 3 celery stalks, chopped
- 1 apple, peeled, cored and chopped
- ¼ cup (40 g) raisins
- ¼ cup (30 g) chopped walnuts
- 1 tbsp. mayonnaise
- 1 tbsp. plain low-fat yogurt
- 1 tbsp. lemon juice
- 3 oz. (90 g) mixed salad leaves
- Salt and freshly ground black pepper, to taste
How to make it
- Combine the cooked chicken, celery, apple, raisins and walnuts in a bowl.
- Add the mayonnaise, yogurt and lemon juice. Season to taste and mix well.
- Divide the salad leaves between two bowls and top with the chicken mixture. Finish with black pepper and serve.
