Ingredients

  • 2 lbs. (900 g) chicken breasts
  • 4 bell peppers, sliced
  • 1 red onion, sliced
  • 2 tbsp. honey
  • 1 tbsp. olive oil
  • Juice of 1 lime
  • 1 tbsp. chili powder
  • 1 tbsp. cumin
  • 1 tbsp. paprika
  • 1 tsp. salt
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 1 cup chopped tomatoes

How to make it

  1. Place half the sliced peppers and onion in the slow cooker. Add the chicken, honey, olive oil, lime juice, spices and chopped tomatoes.
  2. Add the remaining peppers and onion. Cook on high for about 4 hours, until the chicken is fully cooked. Check the thickest part with a food thermometer; chicken should reach 165°F (74°C).
  3. Remove the chicken, shred it with two forks, and return it to the cooker. Mix and cook for another 10 minutes on low.
  4. Divide the filling into 8 servings. Serve with your preferred tortillas, vegetables or other sides.
